  • 8 slices of soft white or wheat bread
  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, finely chopped
  • 1 tbsp fresh chives, finely chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • 1 tbsp butter, softened (optional, for spreading on bread)

Method

  1. In a mixing bowl, combine the softened cream cheese, fresh dill, chives, lemon juice, salt, and pepper. Mix until smooth and well blended.
  2. Using a sharp knife or a mandoline, thinly slice the cucumber into even rounds. Pat the slices dry with a paper towel to remove excess moisture if desired.
  3. Lay out the slices of bread on a clean surface. If desired, lightly butter each slice for added richness. Spread a generous layer of the cream cheese mixture onto each slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining bread slices to form sandwiches.
  4. For a polished look, trim the crusts off the sandwiches using a sharp knife. Cut each sandwich into smaller triangles, rectangles, or squares for easy serving. Arrange them on a platter and garnish with additional fresh herbs if desired.

Notes

Choose soft bread like white or wheat for best results. Assemble sandwiches just before serving to prevent sogginess. For variations, add thinly sliced radishes or a sprinkle of smoked paprika to the cream cheese spread.
