  • 1 large cucumber, thinly sliced
  • 8 oz cream cheese, softened
  • 2 tbsp fresh dill, chopped
  • 1 tbsp lemon juice
  • Salt and pepper to taste
  • Optional: fresh herbs like mint or chives for garnish

  1. In a small bowl, mix the softened cream cheese, chopped dill, lemon juice, salt, and pepper until smooth and well combined.
  2. Using a sharp knife or mandoline, thinly slice the cucumber. Pat the slices dry with a paper towel to remove excess moisture.
  3. Spread a generous layer of the cream cheese mixture onto one side of each bread slice. Arrange the cucumber slices evenly over the cream cheese on half of the bread slices. Top with the remaining bread slices, cream cheese side down.
  4. Trim the crusts off the sandwiches for a more elegant look, if desired. Cut each sandwich into quarters or smaller rectangles for dainty tea sandwiches. Garnish with fresh herbs and serve immediately.

Notes

Use soft, fresh bread for the best texture. Prepare the cream cheese spread a day ahead to save time. Assemble the sandwiches just before serving to keep them fresh.
