  • 1 cup freshly squeezed lemon juice (about 6-8 lemons)
  • 1/2 cup fresh mint leaves, plus extra for garnish

  • Watermelon slices and lemon wheels for serving

  1. In a blender, combine the watermelon cubes and fresh mint leaves. Blend until completely smooth and liquefied.
  2. Strain the watermelon mint mixture through a fine-mesh sieve into a large pitcher, pressing on the solids to extract all the liquid. Discard the pulp.
  3. In a small saucepan, combine the sugar with 1 cup of water. Heat over medium heat, stirring constantly, until the sugar completely dissolves to create a simple syrup. Remove from heat and let cool completely.
  4. Add the cooled simple syrup, remaining 3 cups of cold water, and freshly squeezed lemon juice to the pitcher with the watermelon mint juice. Stir well to combine.
  5. Taste and adjust sweetness if needed by adding more sugar syrup or lemon juice according to your preference.
  6. Chill in the refrigerator for at least 1 hour to allow the flavors to meld together.
  7. Serve over ice with fresh mint sprigs, watermelon slices, and lemon wheels for garnish.

Notes

Use ripe, sweet watermelon to reduce sugar needs. Make watermelon mint puree and simple syrup up to 24 hours in advance. Freeze watermelon cubes instead of ice to prevent dilution. Adjust sweetness with sugar alternatives if desired.
