- Cook the Pasta: Bring a large pot of salted water to boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
- Prepare the Salmon: While pasta cooks, pat salmon dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook salmon for 3-4 minutes per side until golden and cooked through. Remove from skillet and set aside.
- Make the Garlic Cream Sauce: Reduce heat to medium and add butter to the same skillet. Add minced garlic and sauté for 30 seconds until fragrant. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
- Combine Everything: Add spinach to the sauce and cook until wilted, about 2 minutes. Flake the cooked salmon into bite-sized pieces and add to the sauce along with the drained pasta. Toss everything together, adding pasta water as needed to reach your desired consistency.
- Serve Immediately: Garnish with fresh herbs and serve with lemon wedges. This dish is best enjoyed fresh!
