Ingredients

Ingredients
  • 12 oz salmon fillets, skin removed
  • 8 oz pasta (linguine or fettuccine work best)
  • 4 cups fresh spinach
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Fresh dill or parsley for garnish
  • Lemon wedges for serving

Method

Instructions
  1. Cook the Pasta: Bring a large pot of salted water to boil. Cook pasta according to package directions until al dente. Reserve 1/2 cup of pasta water before draining.
  2. Prepare the Salmon: While pasta cooks, pat salmon dry and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Cook salmon for 3-4 minutes per side until golden and cooked through. Remove from skillet and set aside.
  3. Make the Garlic Cream Sauce: Reduce heat to medium and add butter to the same skillet. Add minced garlic and sauté for 30 seconds until fragrant. Pour in heavy cream and bring to a simmer. Stir in Parmesan cheese until melted and smooth.
  4. Combine Everything: Add spinach to the sauce and cook until wilted, about 2 minutes. Flake the cooked salmon into bite-sized pieces and add to the sauce along with the drained pasta. Toss everything together, adding pasta water as needed to reach your desired consistency.
  5. Serve Immediately: Garnish with fresh herbs and serve with lemon wedges. This dish is best enjoyed fresh!

Notes

Choose quality salmon for superior flavor; Don't overcook the salmon to keep it moist; Use pasta water to emulsify the sauce; Fresh spinach cooks quickly and adds vibrant color; Best served immediately for optimal texture
