- In a blender or food processor, combine the fresh strawberries, honey, lemon juice, and vanilla extract. Blend until smooth and well combined.
- Add the Greek yogurt and pinch of salt to the strawberry mixture. Pulse a few times until everything is fully incorporated but still maintains some texture.
- Pour the mixture into a freezer-safe container. If you prefer a smoother texture, you can churn it in an ice cream maker according to the manufacturer's instructions.
- Freeze for at least 4-6 hours, or until firm. For the best texture, stir the mixture every hour during the first 2-3 hours of freezing to prevent large ice crystals from forming.
- When ready to serve, let the frozen yogurt sit at room temperature for 5-10 minutes to soften slightly. Scoop into bowls and enjoy immediately!
Notes
Choose ripe sweet strawberries for best flavor. Full-fat Greek yogurt creates creamiest texture. For ultra-creamy results without ice cream maker, stir every 30 minutes during first 2 hours. Can use frozen strawberries if thawed and drained. Store in airtight container for up to 2 months.
