- Prepare the zucchini by cutting them into 1/2-inch thick sticks, similar to traditional french fries. Pat them completely dry with paper towels - this is crucial for achieving maximum crispiness!
- Set up your breading station with three shallow bowls. In the first bowl, place the chickpea flour. In the second bowl, whisk together the plant-based milk with 1/4 teaspoon of salt. In the third bowl, combine the gluten-free breadcrumbs with garlic powder, onion powder, smoked paprika, remaining salt, and black pepper.
- Working with one zucchini stick at a time, coat it in the flour, shaking off any excess. Then dip it into the plant-based milk mixture, allowing excess to drip off. Finally, press it firmly into the seasoned breadcrumb mixture until fully coated.
- Preheat your air fryer to 400°F (200°C). Arrange the coated zucchini fries in a single layer in the air fryer basket, making sure they don't touch each other. Lightly spray with olive oil.
- Air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy. Serve immediately with your favorite dipping sauce.
Notes
Dry zucchini thoroughly before breading for maximum crispiness. Don't overcrowd the air fryer basket. Can be frozen before cooking - add 2-3 minutes to cooking time if cooking from frozen.
