- Preheat oven to 350°F. Grease a 9x5-inch loaf pan with butter or baking spray.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
- In a large mixing bowl, beat the brown sugar and butter together on high speed until light and fluffy, about 3 minutes.
- Add eggs one at a time, beating well after each addition and scraping down the bowl between eggs. Mix in vanilla extract.
- Gently mix in mashed bananas using a spatula, then add dry ingredients and fold together until just combined.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 50-60 minutes or until a wooden pick inserted into center comes out clean.
- Let cool in pan for 20 minutes, then transfer to wire rack to cool completely.
Notes
Use very ripe, spotty bananas for best flavor. Don't overmix the batter to keep bread tender. Can add walnuts, chocolate chips, or coconut for variations. Store tightly wrapped at room temperature for 3-4 days or freeze for longer storage.
