  • 2 cups all-purpose flour

  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup optional add-ins (chocolate chips, walnuts, pecans, dried cranberries)

  1. Preheat oven to 325°F (163°C)
  2. Mash bananas with a fork until smooth, leaving a few small chunks for texture if desired
  3. Slice butter into smaller chunks and soften in microwave, being careful not to fully melt it
  4. In a large mixing bowl, stir together mashed bananas, softened butter, eggs, and sugar until fully blended
  5. Mix in remaining ingredients (flour, vanilla, baking soda, baking powder, salt) until batter is fully mixed - do not overmix
  6. Optional: Stir in 1 cup of favorite add-ins like chocolate chips or chopped walnuts
  7. Pour batter into a nonstick bread pan and smooth the top
  8. Bake for 65-70 minutes at 325°F, checking with toothpick for doneness at 65 minutes
  9. Remove from oven and let cool in pan for 10 minutes (do not remove during this time)
  10. Remove from pan and place on cooling rack to cool completely (1-2 hours)

Notes

Use very ripe, speckled bananas for best sweetness and texture. Partially melting butter helps with mixing but avoid turning it into liquid. Do not overmix the batter to maintain tender texture. Let bread cool completely before slicing for best results.
