- Prepare the vegetables and fruit. Wash and slice the strawberries, cucumber, and red onion. Place them in a large mixing bowl.
- Make the dressing. In a small bowl, whisk together the olive oil, lemon juice, honey, salt, and pepper until well combined.
- Combine the salad. Add the crumbled feta cheese and chopped mint to the bowl with the strawberries and cucumber. Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill. This salad can be served right away or refrigerated for up to 2 hours to allow the flavors to meld together.
Notes
For best results, use ripe but firm strawberries that hold their shape when sliced. English cucumbers work particularly well because they have fewer seeds and thinner skin. If making ahead, wait to add dressing until just before serving to keep ingredients crisp.
