Ingredients

Ingredients
  • 4 cups cubed watermelon (about 1 small watermelon)
  • 3 ripe peaches, pitted and sliced
  • 1/4 cup fresh mint leaves, chopped
  • 2 tablespoons fresh lime juice
  • 1 tablespoon honey or maple syrup (optional)
  • Pinch of sea salt
  • Fresh basil leaves for garnish (optional)

Method

Instructions
  1. Prepare the fruits by cutting the watermelon into bite-sized cubes and slicing the peaches. Remove the pits from the peaches and cut them into similar-sized pieces as the watermelon.
  2. In a large mixing bowl, gently combine the watermelon cubes and peach slices. Be careful not to crush the delicate fruits.
  3. Add the chopped mint leaves to the fruit mixture. The mint adds a refreshing herbal note that complements the sweet fruits perfectly.
  4. Drizzle with fresh lime juice and honey (if using). The lime juice enhances the natural sweetness while adding a bright, tangy flavor.
  5. Sprinkle with a pinch of sea salt to balance the flavors. Toss everything gently to combine.
  6. Let the salad sit for 5-10 minutes to allow the flavors to meld together. Serve chilled and garnish with additional mint or basil leaves.

Notes

Choose ripe but firm fruits, chill all ingredients before assembling, and wait to add dressing ingredients until just before serving to prevent the salad from becoming watery.
