  • 2 cups fresh strawberries, sliced
  • 1 cup Golden Oreos or vanilla sandwich cookies, crushed
  • 1 cup heavy whipping cream
  • 1/4 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tbsp strawberry jam (optional, for extra strawberry flavor)

  1. Preheat your oven to 350°F (175°C). Prepare the vanilla cake mix according to package directions. Pour the batter into two 8-inch round cake pans lined with parchment paper. Bake for 20-25 minutes or until a toothpick inserted comes out clean. Let cool completely.
  2. In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form. This will be your light and fluffy filling between the cake layers.
  3. Place the Golden Oreos in a zip-top bag and crush them with a rolling pin until you have fine crumbs with some larger pieces for texture.
  4. Place one cake layer on your serving plate. Spread half of the whipped cream over the cake, then arrange sliced strawberries on top. Add the second cake layer, spread remaining whipped cream, and top generously with crushed cookies and remaining strawberries.
  5. Refrigerate for at least 1 hour before serving to allow the flavors to meld together. Slice and enjoy!

Notes

Use ripe fresh strawberries for best flavor. Cake can be assembled up to 8 hours before serving. Store leftovers in refrigerator for up to 3 days. Can substitute stabilized whipped cream or vanilla pudding for filling if needed.
