- Heat olive oil in a medium saucepan over medium heat. Add the chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.
- Add the rice to the saucepan and stir constantly for 2 minutes until the rice becomes slightly translucent around the edges. This toasting step helps the rice absorb flavors better and prevents it from becoming mushy.
- Pour in the vegetable broth and lemon juice. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes until the liquid is absorbed and rice is tender.
- Remove from heat and let stand covered for 5 minutes. Fluff with a fork, then stir in the dried herbs, fresh parsley, dill, and lemon zest. Season with salt and pepper to taste.
Notes
Use fresh lemon juice for best flavor. Don't skip toasting the rice as it creates nutty flavor and keeps grains separate. Allow rice to rest covered after cooking for perfect texture.
