- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper
- In a large bowl, whisk together the flour, baking soda, and salt
- Add the softened butter, granulated sugar, and brown sugar to the same bowl and cream them together until well combined and slightly fluffy
- Beat in the egg and vanilla extract until the mixture is smooth and uniform
- Stir in the rolled oats until just combined, then fold in raisins or chocolate chips if using
- Drop rounded tablespoons of dough onto prepared baking sheets, spacing them about 2 inches apart, and bake for 10-12 minutes until edges are golden brown
- Let cookies cool on baking sheet for 5 minutes before transferring to a wire rack to cool completely
Notes
Don't overbake - cookies continue cooking on hot baking sheet after removal. Use room temperature ingredients for smooth mixing. Cookies freeze beautifully for up to 3 months.
