Ingredients

Ingredients
  • 1 pound fresh green beans, trimmed
  • 8 ounces cremini mushrooms, sliced
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon lemon juice

Method

Instructions
  1. Bring a large pot of salted water to boil. Add green beans and blanch for 2-3 minutes until bright green and slightly tender. Immediately transfer to an ice bath to stop cooking, then drain thoroughly.
  2. Heat olive oil in a large skillet over medium-high heat. Add mushrooms and sauté for 4-5 minutes until golden brown and tender. Season with salt and pepper.
  3. Reduce heat to medium and add butter to the skillet. Once melted, add minced garlic and red pepper flakes (if using). Sauté for 1 minute until fragrant.
  4. Add the blanched green beans to the skillet and toss to coat in the garlic butter sauce. Cook for 2-3 minutes until beans are heated through and tender-crisp.
  5. Remove from heat and stir in lemon juice and fresh parsley. Adjust seasoning with additional salt and pepper if needed. Serve immediately.

Notes

Blanching is key to ensure green beans stay vibrant green and achieve perfect tender-crisp texture. For extra umami boost, try adding a splash of soy sauce instead of salt.
