- In a medium bowl, whisk together olive oil, minced garlic, parmesan cheese, parsley, oregano, salt, pepper, and paprika until well combined.
- Add the cubed chicken to the marinade and toss until each piece is evenly coated. Cover the bowl and refrigerate for at least 30 minutes (or up to 4 hours for maximum flavor).
- Thread the marinated chicken cubes onto the prepared skewers, leaving a little space between each piece for even cooking. Aim for 4-5 pieces per skewer.
- Preheat your grill to medium-high heat (about 400°F). Grill the skewers for 10-12 minutes, turning occasionally, until the chicken is cooked through and reaches an internal temperature of 165°F.
- Remove the skewers from the grill and let them rest for 5 minutes before serving to allow the juices to redistribute throughout the chicken.
Notes
Cut chicken pieces to similar sizes for uniform cooking, leave space between chicken pieces on skewers, maintain consistent grill temperature, marinate for 30 minutes minimum (4 hours maximum), always cook chicken to 165°F for safety.
