- Prepare the fruits: Wash and dry all fruits thoroughly. Hull and quarter the strawberries, peel and cube the mango, peel and slice the kiwi, and halve the grapes. Cut pineapple into bite-sized chunks if using fresh pineapple.
- Combine fruits: In a large mixing bowl, gently combine the strawberries, pineapple, kiwi, red and green grapes, and mango pieces. Be careful not to crush the delicate fruits.
- Make the dressing: In a small bowl, whisk together the raw honey, fresh lime juice, lime zest, and vanilla extract until well combined and slightly emulsified.
- Toss and chill: Drizzle the honey lime dressing over the fruit mixture and gently toss to coat all pieces evenly. Fold in the chopped mint leaves.
- Serve: Refrigerate for at least 15 minutes to allow flavors to meld, then serve chilled. Garnish with additional mint leaves and lime slices if desired.
Notes
Prepare within 2 hours of serving for best texture, use in-season fruits for optimal sweetness, and add toasted coconut flakes or nuts for extra crunch. Can prepare fruits and dressing separately up to 24 hours in advance and combine just before serving.
