  1. Preheat the oven to 375°F (190°C).
  2. Roll out the puff pastry sheet on a lightly floured surface. Transfer it to a parchment-lined baking sheet.
  3. In a bowl, mix the ricotta cheese, Parmesan cheese, egg, salt, and pepper until smooth. Spread this mixture evenly over the puff pastry, leaving a small border around the edges.
  4. Arrange the sliced heirloom tomatoes on top of the ricotta mixture. Drizzle with olive oil and sprinkle with minced garlic.
  5. Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown and the tomatoes are slightly caramelized.
  6. Remove from the oven and garnish with fresh basil leaves.
