Ingredients

Ingredients
  • 6 ripe tomatoes, diced
  • 1/4 cup fresh basil leaves, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Salt and freshly ground black pepper to taste
  • 1 baguette, sliced into 1/2-inch pieces
  • 2 tablespoons olive oil for brushing

Method

Instructions
  1. In a bowl, combine the diced tomatoes, chopped basil, minced garlic, extra virgin olive oil, and balsamic vinegar. Season with salt and freshly ground black pepper. Stir gently to mix all the ingredients and let it sit for 10 minutes to allow the flavors to meld.
  2. Preheat your oven to 375°F (190°C). Brush both sides of the baguette slices with olive oil and place them on a baking sheet. Toast in the oven for 5-7 minutes or until the bread is golden and crispy. Alternatively, you can toast the bread in a skillet over medium heat for 2-3 minutes per side.
  3. Once the bread is toasted, rub the top of each slice with a garlic clove for extra flavor. Spoon the tomato mixture generously onto each slice of toasted bread. Garnish with additional basil leaves if desired.

Notes

Choose ripe tomatoes for the best flavor. Toast the bread well to prevent sogginess. Serve immediately for the best texture and taste.
