Ingredients

Ingredients
  • 1 pound fresh carrots, peeled and sliced into sticks
  • 1 pound fresh green beans, trimmed
  • 3 tablespoons butter, melted
  • 2 tablespoons honey
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil

Method

Instructions
  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper or lightly grease it.
  2. In a small bowl, whisk together the melted butter, honey, minced garlic, thyme, salt, and pepper until well combined.
  3. Place the carrot sticks and green beans in a large mixing bowl. Drizzle with olive oil and toss to coat evenly.
  4. Pour the honey butter mixture over the vegetables and toss until everything is evenly coated with the glaze.
  5. Spread the vegetables in a single layer on the prepared baking sheet, making sure they're not overcrowded.
  6. Roast for 20-25 minutes, stirring halfway through, until the vegetables are tender and the edges are slightly caramelized.
  7. Remove from oven and let rest for 2-3 minutes before serving. The glaze will thicken slightly as it cools.

Notes

Cut vegetables evenly for uniform cooking. Don't overcrowd the pan - use two baking sheets if needed. For a less sweet version, reduce honey to 1 tablespoon and add extra salt. Can prepare vegetables and glaze separately up to 24 hours in advance.
