Ingredients

Ingredients
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 3 large eggs
  • 2 teaspoons vanilla extract
  • 1 cup boiling water
  • 1/2 cup unsalted butter
  • 1/4 cup cocoa powder
  • 6 tablespoons milk
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped walnuts or pecans (optional)

Method

Instructions
  1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking pan.
  2. In a large mixing bowl, whisk together flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. Add vegetable oil, buttermilk, eggs, and vanilla extract to the dry ingredients. Mix until just combined.
  4. Carefully stir in the boiling water until the batter is smooth and well blended.
  5. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  6. While the cake is baking, prepare the icing by melting butter in a medium saucepan over medium heat.
  7. Whisk in cocoa powder and milk until smooth.
  8. Remove from heat and stir in powdered sugar and vanilla extract until the icing is glossy and pourable.
  9. If using nuts, stir them into the icing mixture.
  10. Remove the cake from the oven and immediately pour the warm icing over the hot cake.
  11. Use a spatula to spread the icing evenly across the surface.
  12. Allow the cake to cool completely before cutting into squares.

Notes

Measure accurately with measuring cups and spoons, don't overmix the batter, test for doneness with a toothpick (should come out with a few moist crumbs), serve slightly warm for enhanced flavor.
