- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.
- Wash the green beans thoroughly and pat them dry with a clean towel. Trim the ends off the beans – you can do this quickly by lining up a handful and cutting off the stem ends all at once.
- In a large bowl, toss the green beans with olive oil, making sure each bean is lightly coated. Add the minced garlic, salt, pepper, and paprika if using. Toss again to distribute the seasonings evenly.
- Spread the green beans in a single layer on your prepared baking sheet. Make sure they aren't crowded – this ensures they'll get crispy rather than steam.
- Roast for 15-20 minutes, shaking the pan halfway through cooking. The beans are ready when they're tender-crisp with slightly browned and crispy edges.
- Remove from oven and immediately sprinkle with grated parmesan cheese while the beans are still hot. The residual heat will melt the cheese perfectly. Garnish with fresh parsley before serving.
Notes
For the crispiest results, make sure green beans are completely dry before tossing with oil. Don't overcrowd the baking sheet - use two if necessary. Freshly grated parmesan cheese works best for melting and flavor.
