- Prepare the produce: Wash and dry the strawberries and cucumber thoroughly. Hull the strawberries and slice them into uniform pieces. Thinly slice the cucumber using a mandoline or sharp knife for even slices.
- Combine the base: In a large mixing bowl, gently toss together the sliced strawberries, cucumber, and chopped mint leaves.
- Make the dressing: In a small bowl, whisk together the olive oil, honey, lemon juice, sea salt, and black pepper until well combined and slightly emulsified.
- Toss and serve: Drizzle the dressing over the strawberry-cucumber mixture and toss gently to coat all ingredients evenly. If using feta cheese, sprinkle it over the top just before serving.
