- Prepare the vegetables and fruit. Wash and slice the strawberries and cucumber. Place them in a large mixing bowl.
- Make the dressing. In a small bowl, whisk together olive oil, apple cider vinegar, honey, black pepper, and sea salt until well combined.
- Combine ingredients. Pour the dressing over the strawberry and cucumber mixture. Gently toss to coat everything evenly.
- Add feta and mint. Sprinkle the crumbled feta cheese and chopped mint leaves over the salad. Toss gently one more time.
- Serve immediately or chill. This salad can be served right away or refrigerated for up to 2 hours to allow flavors to meld.
Notes
For best results, use the freshest ingredients available. English cucumbers work particularly well because they have fewer seeds and thinner skin. If making ahead, add mint just before serving to maintain vibrant color and aroma.
