  • ¾ cup light or dark brown sugar (165g)

  • 2 large eggs
  • 1¾ cups mashed ripe bananas (430g)
  • 1 teaspoon vanilla extract

  1. Preheat oven to 350°F. Grease a 9x5-inch loaf pan with butter or baking spray.
  2. In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon.
  3. In a large mixing bowl or stand mixer with paddle attachment, beat brown sugar and butter on high speed until light and fluffy, about 3 minutes.
  4. Beat in eggs one at a time, scraping down the bowl after each addition. Beat in vanilla extract.
  5. Mix in mashed bananas, then gently fold in dry ingredients until just combined.
  6. Pour batter into prepared loaf pan and bake for 50-60 minutes until a wooden pick inserted in center comes out clean.
  7. Let cool in pan for 20 minutes, then transfer to wire rack to cool completely.

Notes

Use very ripe bananas with brown spots for best flavor and moisture. Do not overmix batter after adding dry ingredients. Bread can be frozen for up to 3 months. Optional additions: 1 cup chopped walnuts or pecans, ¾ cup chocolate chips.
