- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan. Mash the ripe bananas with a fork until smooth.
- Add melted butter to mashed bananas and stir to combine. Mix in brown sugar, egg, and vanilla extract until well incorporated.
- In a separate bowl, whisk together flour, baking soda, salt, and cinnamon (if using).
- Gradually add dry ingredients to wet ingredients, stirring gently until just combined. Fold in walnuts or chocolate chips if using.
- Pour batter into prepared loaf pan and bake for 55-65 minutes, until toothpick inserted into center comes out clean.
- Let banana bread cool in pan for 10 minutes, then transfer to wire rack to cool completely.
Notes
Use very ripe bananas with brown spots for maximum sweetness and moisture. Don't overmix the batter to avoid toughness. Bring egg to room temperature for better incorporation. Use toothpick test for doneness. Store in airtight container for up to 3 days or freeze for up to 3 months.
