  • 3 Large Ripe Bananas
  • 2 Large Eggs
  • 1 teaspoon Vanilla Extract
  • 2 Cups All Purpose Flour
  • 1 Cup Granulated Sugar
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Method
 

Instructions
  1. Preheat oven to 350 degrees Fahrenheit
  2. Grease a loaf pan with butter or non-stick cooking spray
  3. Melt butter in a large bowl using microwave (about 1 minute)
  4. Add bananas to melted butter and mash with a fork
  5. Add vanilla extract and eggs to banana mixture, mash and stir until no yellow streaks remain
  6. In separate bowl, whisk together flour, sugar, baking soda, salt, and cinnamon
  7. Add dry ingredients to wet ingredients and mix gently with spatula until just combined
  8. Pour batter into prepared loaf pan and smooth the top
  9. Bake for 45-55 minutes until toothpick inserted in center comes out clean

Notes

Use very ripe bananas with brown spots for best flavor and sweetness. Don't overmix the batter - a few lumps are fine. Let bread cool completely before slicing for best texture. Store in airtight container at room temperature for up to 4 days.
