- Preheat oven to 350 degrees Fahrenheit
- Grease a loaf pan with butter or non-stick cooking spray
- Melt butter in a large bowl using microwave (about 1 minute)
- Add bananas to melted butter and mash with a fork
- Add vanilla extract and eggs to banana mixture, mash and stir until no yellow streaks remain
- In separate bowl, whisk together flour, sugar, baking soda, salt, and cinnamon
- Add dry ingredients to wet ingredients and mix gently with spatula until just combined
- Pour batter into prepared loaf pan and smooth the top
- Bake for 45-55 minutes until toothpick inserted in center comes out clean
Notes
Use very ripe bananas with brown spots for best flavor and sweetness. Don't overmix the batter - a few lumps are fine. Let bread cool completely before slicing for best texture. Store in airtight container at room temperature for up to 4 days.
