  • 4 cups cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1 cup fresh basil leaves, chopped
  • 1/2 cup fresh parsley, chopped
  • 1/2 cup kalamata olives, pitted and sliced
  • 4 ounces mozzarella pearls or cubed fresh mozzarella
  • 2 tablespoons capers (optional)
  • 1/4 cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of red pepper flakes (optional)

Method
 

Instructions
  1. Cook the pasta according to package directions until al dente, drain well and rinse with cold water, then transfer to a large mixing bowl
  2. While pasta cooks, prepare vegetables - halve cherry tomatoes, finely dice red onion, chop basil and parsley, slice olives
  3. Make the dressing by whisking together olive oil, balsamic vinegar, garlic, Dijon mustard, honey, salt, pepper, and optional red pepper flakes
  4. Combine pasta, vegetables, mozzarella pearls, capers, and dressing, toss together until well coated
  5. Let the salad marinate for at least 30 minutes before serving, garnish with additional basil leaves

Notes

Use ripe, in-season tomatoes for best flavor. Salad gets better as it sits - prepare up to a day in advance. Add grilled chicken or chickpeas for extra protein.
