  • 2 cloves garlic, minced
  • 1/4 cup pine nuts or chopped walnuts (optional)
  • 1/3 cup extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey or maple syrup
  • 1/2 teaspoon dried oregano
  • Salt and black pepper to taste

  1. Cook the Pasta: Bring a large pot of salted water to boil. Add the pasta and cook according to package directions until al dente. Drain well and rinse with cold water to stop the cooking process and cool the pasta quickly.
  2. Prepare the Bruschetta Components: While the pasta cooks, prepare your fresh ingredients. Halve the cherry tomatoes, chop the basil, dice the red onion, and mince the garlic. If using mozzarella pearls, they're ready to go – otherwise, dice your fresh mozzarella into bite-sized pieces.
  3. Make the Balsamic Dressing: In a small bowl or jar, whisk together the olive oil, balsamic vinegar, lemon juice, honey, oregano, salt, and pepper. Taste and adjust seasoning as needed.
  4. Combine Everything: In a large mixing bowl, combine the cooled pasta, cherry tomatoes, mozzarella, basil, red onion, and garlic. Pour the dressing over the salad and toss gently to coat everything evenly.
  5. Chill and Serve: Cover the salad and refrigerate for at least 30 minutes to allow flavors to meld. Before serving, give it a final toss and garnish with additional fresh basil leaves and a sprinkle of pine nuts if using.

Notes

Make this salad up to 24 hours in advance as flavors improve with time – just add fresh basil right before serving. Short pasta with ridges works best to hold the dressing. For a main course, add grilled chicken.
