Ingredients

Ingredients
  • 1 cup (2 sticks) unsalted butter, softened
  • 1 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1 cup raisins or chocolate chips (optional)

Method

Instructions
  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone baking mats to prevent sticking.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy. This should take about 2-3 minutes using an electric mixer.
  3. Beat in the eggs one at a time, ensuring each is fully incorporated. Add the vanilla extract and mix until combined.
  4. In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon. Gradually add the dry ingredients to the wet mixture, mixing just until combined.
  5. Using a spatula, gently fold in the rolled oats and raisins or chocolate chips (if using) until evenly distributed.
  6. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers look slightly underbaked.
  7. Allow the cookies to cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or store in an airtight container for up to a week.

Notes

Ensure your butter is softened but not melted for the perfect cookie texture. For thicker cookies, chill the dough for 30 minutes before baking. Customize add-ins like raisins, nuts, or white chocolate chips for a unique twist. Rotate the baking sheets halfway through baking for evenly golden cookies.
