  • 4 bone-in chicken thighs or 6 chicken breasts
  • 1.5 lbs baby potatoes, halved
  • 4 large carrots, peeled and sliced
  • 1 medium onion, chopped
  • 8 cloves garlic, minced
  • ½ cup unsalted butter, softened
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup chicken broth
  • 2 tablespoons fresh parsley, chopped

Instructions
  1. Prepare garlic butter mixture by combining softened butter, minced garlic, thyme, rosemary, paprika, salt, and pepper in a small bowl. Mix until well combined.
  2. Place chopped onions at the bottom of slow cooker. Arrange halved potatoes and sliced carrots over onions. Drizzle with olive oil and season with pinch of salt and pepper.
  3. Season chicken pieces with salt and pepper, then rub garlic butter mixture generously over chicken, getting under skin if using bone-in thighs.
  4. Place chicken pieces on top of vegetables in slow cooker. Pour chicken broth around chicken and vegetables, being careful not to wash off garlic butter coating.
  5. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is tender and cooked through.
  6. For crispy chicken skin, transfer chicken to baking sheet and broil for 2-3 minutes until golden brown.

Notes

Don't overcrowd slow cooker (not more than ¾ full). Rub butter under chicken skin for better flavor infusion. For thicker sauce, mix cornstarch with water during last 30 minutes. Let dish rest 10 minutes before serving.
