- Prepare garlic butter mixture by combining softened butter, minced garlic, thyme, rosemary, paprika, salt, and pepper in a small bowl. Mix until well combined.
- Place chopped onions at the bottom of slow cooker. Arrange halved potatoes and sliced carrots over onions. Drizzle with olive oil and season with pinch of salt and pepper.
- Season chicken pieces with salt and pepper, then rub garlic butter mixture generously over chicken, getting under skin if using bone-in thighs.
- Place chicken pieces on top of vegetables in slow cooker. Pour chicken broth around chicken and vegetables, being careful not to wash off garlic butter coating.
- Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until chicken is tender and cooked through.
- For crispy chicken skin, transfer chicken to baking sheet and broil for 2-3 minutes until golden brown.
Notes
Don't overcrowd slow cooker (not more than ¾ full). Rub butter under chicken skin for better flavor infusion. For thicker sauce, mix cornstarch with water during last 30 minutes. Let dish rest 10 minutes before serving.
